  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ½ cup (100 g) light brown sugar, packed
  • 1 large egg, at room temperature
  • 1 egg yolk, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup (50 g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Reduce the apple cider: Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about ¼ cup (60 ml), about 12-15 minutes. Stir occasionally. Pour into a small bowl and let cool completely.
  2. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 2-3 minutes. Scrape down the sides as needed.
  4. Beat in the egg, egg yolk, and vanilla extract until well combined. Add the cooled reduced apple cider and mix until smooth.
  5. In a separate medium bowl, whisk together the flour, cornstarch, baking soda, baking powder, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula until just combined. Do not overmix. The dough will be soft and slightly sticky.
  7. Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes (optional but recommended for thicker cookies).
  8. In a shallow bowl, mix together ¼ cup granulated sugar and 1 tablespoon cinnamon for the coating.
  9. Using a cookie scoop or tablespoon, scoop heaping tablespoons of dough (about 1.5 tablespoons each). Roll into balls, then roll each ball in the cinnamon sugar mixture until fully coated. Place on prepared baking sheets, spacing 2 inches apart.
  10. Bake one sheet at a time for 10-12 minutes. The cookies should look puffed and slightly cracked on top with golden edges. The centers will look soft and slightly underdone.
  11. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, chill the dough for at least 30 minutes to prevent spreading. Don’t overbake; cookies will continue to set as they cool. For dairy-free, use vegan butter. For gluten-free, use a 1:1 gluten-free flour blend with xanthan gum.
