  • 68 medium fresh jalapeños
  • 8 oz cream cheese, softened
  • 1216 slices thick-cut bacon
  • 1/2 teaspoon garlic powder
  • Pinch of salt
  • 1 tablespoon everything bagel seasoning (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and place a wire rack on top.
  2. Wash and dry jalapeños. Cut each in half lengthwise. Use a small spoon to remove all seeds and white membranes.
  3. In a small bowl, combine softened cream cheese, garlic powder, and a pinch of salt. Mix until smooth.
  4. Fill each jalapeño half with the cream cheese mixture, spreading evenly to the edges without overstuffing.
  5. Cut bacon slices in half crosswise. Wrap one half-slice around each filled jalapeño, overlapping ends on the bottom. Place seam-side down on the wire rack.
  6. Bake for 20-25 minutes, flipping each bite with tongs at the 15-minute mark, until bacon is golden brown and crispy and cream cheese is bubbly.
  7. Let rest on the pan for 5 minutes before serving. The filling will be very hot.

Notes

For extra crispy bacon, par-cook bacon slices in the microwave for 30 seconds before wrapping. Wear gloves when handling jalapeños to avoid skin irritation. These can be assembled up to 24 hours in advance and refrigerated; add 2-3 minutes to baking time if starting cold. Freeze unbaked bites for up to 3 months; bake from frozen at 400°F for 25-30 minutes.
