Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease the paper with cooking spray or butter.
  2. Make the cream cheese swirl: In a medium bowl, beat the softened cream cheese with 2 tablespoons sugar until smooth. Add the egg yolk and ½ teaspoon vanilla, and beat until combined. Set aside.
  3. Mix the dry ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt. Make a well in the center.
  4. Mix the wet ingredients: In a separate bowl, whisk together the eggs, granulated sugar, brown sugar, and oil until smooth and slightly thickened, about 1 minute. Add the mashed bananas, pumpkin puree, and 1 teaspoon vanilla. Whisk until combined.
