This easy pumpkin dump cake with crunchy pecan streusel is a quick and delicious fall dessert that comes together in under 10 minutes of prep. Simply dump, layer, and bake for a crowd-pleasing treat that tastes like you spent hours on it.

Ingredients

Scale
  • 1 can (15 ounces) pumpkin puree
  • 1 can (12 ounces) evaporated milk
  • 3 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 box (15.25 ounces) yellow cake mix
  • 1 cup chopped pecans (raw)
  • 3/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or nonstick spray.
  2. Make the pumpkin layer: In a large bowl, whisk together the pumpkin puree, evaporated milk, eggs, granulated sugar, brown sugar, pumpkin pie spice, salt, and vanilla extract until smooth and fully combined.
  3. Pour the filling into the prepared dish and spread it evenly with a spatula. Tap the dish gently on the counter to release any air bubbles.
  4. Add the cake mix layer: Sprinkle the dry cake mix evenly over the pumpkin filling. Do not stir.
  5. Add the pecans: Sprinkle the chopped pecans evenly over the cake mix layer.
  6. Drizzle with melted butter: Pour the melted butter as evenly as possible over the top.
  7. Bake for 45 to 50 minutes, until the top is golden brown and the edges are bubbly. If the top browns too fast after 35 minutes, tent loosely with foil.
  8. Cool completely on a wire rack for at least 30 minutes before serving. For cleaner slices, refrigerate for an hour before cutting.

Notes

Let the cake cool completely before cutting to allow the filling to set. For a nut-free version, skip the pecans and add 1/2 cup old-fashioned oats mixed with 2 tablespoons brown sugar. For a gluten-free option, use a gluten-free yellow cake mix.
