Ingredients

Scale
  • 1 large rectangular wooden cutting board or serving platter (at least 18x12 inches)
  • 1 block cream cheese (8 ounces), softened
  • 1 cup shredded mozzarella cheese
  • 810 slices provolone cheese
  • 2 tablespoons black sesame seeds or poppy seeds (optional)
  • 1 small piece of white cheddar or Monterey Jack (for goal posts)
  • 1 package pepperoni slices (about 6 ounces)
  • 1 package hard salami slices (about 6 ounces)
  • 1 block sharp cheddar cheese (8 ounces), cut into cubes
  • 1 block pepper jack cheese (8 ounces), cut into cubes
  • 1 wedge aged gouda (4 ounces), sliced thin (optional)
  • 1/2 cup mixed olives (green and black)
  • Small bunch of fresh rosemary sprigs
  • 1/4 cup honey or hot honey
  • Assorted crackers (about 3 cups)
  • Small bowls for olives, honey, and crackers

Instructions

  1. Prepare the board: Place your cutting board or platter on a flat surface. If using a wooden board, consider lining it with parchment paper for easy cleanup. Make sure the board is clean and dry.
  2. Make the cream cheese base: In a small bowl, beat the softened cream cheese with a fork until smooth and spreadable. Spread the cream cheese evenly over the entire surface of the board, leaving a 1-inch border around the edges.
  3. Create the grass: Sprinkle the shredded mozzarella evenly over the cream cheese layer. Press it down gently with your fingertips so it sticks.
  4. Mark the yard lines: Cut the provolone slices into thin strips, about 1/2 inch wide. Lay them across the board at even intervals, spacing them about 2 inches apart. The middle strip is the 50-yard line — make it slightly thicker for emphasis.
  5. Add the end zones: At each short end of the board, create a 2-inch section for the end zones. Use a different color cheese (like white cheddar) cut into small squares and arranged in a grid pattern, or leave clear and add olives later.
  6. Build the goal posts: Cut two thin strips of white cheddar or Monterey Jack, about 4 inches long, for the uprights. Cut one longer strip, about 3 inches, for the crossbar. Arrange them at each end zone in a ‘U’ shape. Press them gently into the cheese base.
  7. Arrange the pepperoni and salami: Place the pepperoni slices in clusters along the sidelines. Arrange the salami slices in a similar way, but group them separately. Leave the center of the field mostly clear.
  8. Add the cheese cubes: Scatter the cheddar, pepper jack, and gouda cubes around the edges of the board and in the end zones. Place them in small groups.
  9. Decorate with olives and rosemary: Place the mixed olives in small clusters around the sidelines. Tuck the rosemary sprigs along the edges.
  10. Drizzle the honey: If using honey, drizzle it lightly over the cheese cubes and around the edges of the board. Avoid drizzling directly on the field lines or the mozzarella grass.
  11. Add the crackers and bowls: Place small bowls of crackers at the corners of the board or on a separate platter. Position your olive and honey bowls at the edges.
  12. Final touch: Sprinkle the black sesame seeds or poppy seeds lightly along the yard lines to simulate the numbers. Step back and admire your work.

Notes

Room temperature cheese spreads better. Use a template for yard lines to ensure even spacing. Don’t overload the board to keep the design visible. Can be assembled up to 2 hours ahead; garnish with rosemary and honey just before serving.
