This soft, chewy monster cookie cake is packed with candy corn, M&M’s, and chocolate chips, topped with colorful frosting and candy eyeballs. It’s the perfect Halloween treat that’s quick, easy, and guaranteed to be a crowd-pleaser.

  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup candy corn
  • 1/2 cup mini chocolate chips
  • 1/2 cup M&M’s (Halloween colors preferred)
  • 1/4 cup rainbow jimmies sprinkles
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 tablespoons milk (plus more if needed)
  • 1 teaspoon vanilla extract (for frosting)
  • Green and purple gel food coloring
  • Candy eyeballs (edible)
  • Extra candy corn and M&M’s for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time, beating well after each. Add vanilla extract and beat until combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet mixture, mixing on low until just combined. Do not overmix.
  6. Using a rubber spatula, gently fold in candy corn, mini chocolate chips, M&M’s, and sprinkles until evenly distributed.
  7. Transfer dough to prepared pan and press into an even layer.
  8. Bake for 20-25 minutes, until edges are golden and center is set but slightly soft. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For frosting: Beat softened butter until creamy. Gradually add powdered sugar alternating with milk, beat until smooth. Add vanilla and beat again. Divide frosting into two bowls; color one green and one purple.
  10. Once cake is completely cool, spread green frosting on top. Use purple frosting to create swirls or stripes. Press candy eyeballs into frosting and add extra candy corn and M&M’s around edges.

Notes

Do not overmix the dough to avoid a tough texture. Use room temperature ingredients for best results. Let the cake cool completely before frosting to prevent melting. For best flavor, bake a day ahead and frost the day of serving. Store frosted cake in an airtight container at room temperature for up to 3 days. Unfrosted cake can be frozen for up to 3 months.
