  • 1 pound large shrimp, peeled and deveined
  • 4 to 5 cloves garlic, minced
  • 1 large lemon, juiced and zested
  • 3 tablespoons unsalted butter
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • 1/4 cup low-sodium chicken broth

Instructions

  1. Pat the shrimp dry with paper towels. Season evenly with salt and black pepper. Set aside.
  2. Place a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. Let it melt and get bubbly but not smoking.
  3. Add the shrimp in a single layer. Cook undisturbed for 1-2 minutes until pink and golden. Flip and cook for another minute. Transfer to a plate and set aside.
  4. Reduce heat to medium. Add remaining 2 tablespoons of butter. Once melted, add minced garlic and red pepper flakes. Stir constantly for about 30 seconds until fragrant.
  5. Pour in chicken broth and lemon juice. Stir, scraping up any brown bits from the bottom of the pan. Let simmer for 1-2 minutes until slightly reduced. Add lemon zest and stir.
  6. Return cooked shrimp to the pan. Toss to coat in the sauce. Cook for 30 seconds to warm through. Taste and adjust salt and pepper if needed.
  7. Sprinkle with fresh parsley and a squeeze of extra lemon if desired. Serve immediately.

Notes

Pat shrimp dry for a good sear. Don’t overcrowd the pan; cook in batches if needed. Use fresh garlic for best flavor. For dairy-free, substitute butter with ghee or vegan butter. Leftovers can be stored in the refrigerator for up to 2 days; reheat gently.
