This brown butter apple crisp features nutty, caramelized butter wrapped around tart apples with a crunchy oat crumble topping. It’s a quick and easy fall dessert that transforms simple ingredients into something truly special.

Ingredients

Scale
  • 6 cups apples, peeled, cored, and sliced (about 56 medium apples; mix of Granny Smith and Honeycrisp)
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Place your baking dish on a rimmed baking sheet to catch any bubbly overflow.
  2. Brown the butter: In a light-colored skillet, melt the 1/2 cup of butter over medium heat. Swirl the pan occasionally. The butter will foam, then crackle, then settle down. Watch for tiny brown specks forming at the bottom. When it smells nutty and turns a golden-amber color (about 4-6 minutes), remove it from the heat immediately. Pour it into a heatproof bowl to stop the cooking. Let it cool slightly.
  3. Prepare the apples: In a large mixing bowl, combine the sliced apples, 1/3 cup granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, nutmeg, lemon juice, and vanilla. Toss everything together until the apples are evenly coated. Let them sit for 5 minutes.
  4. Make the oat crumble: In a medium bowl, whisk together the oats, 3/4 cup flour, brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, and salt. Pour the slightly cooled brown butter over the dry ingredients. Use a fork or your fingers to mix until the mixture resembles coarse, clumpy sand. It should hold together when you squeeze it, but still be crumbly.
  5. Assemble the crisp: Pour the apple mixture into your prepared baking dish, spreading it into an even layer. Sprinkle the oat crumble evenly over the top. Don’t press it down.
  6. Bake: Place the dish on the baking sheet and bake for 40-45 minutes, until the filling is bubbly and the topping is deep golden brown. If the topping is browning too quickly (around 30 minutes), tent loosely with foil for the remaining time.
  7. Cool and serve: Let the crisp cool on a wire rack for at least 15 minutes before serving.

Notes

Watch the butter closely when browning—it can go from brown to burnt in seconds. Use a mix of apple varieties for best flavor and texture. Let the crisp rest for at least 15 minutes after baking to allow the filling to set. The crisp tastes even better the next day as flavors meld together.
