Ingredients

Scale
  • 2 cups shredded rotisserie chicken (about 300g / 10.5 oz)
  • ½ cup buffalo sauce (recommend Frank’s RedHot)
  • 1 tablespoon unsalted butter, melted
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups shredded green cabbage (about 150g / 5.3 oz)
  • ½ cup shredded carrots (about 50g / 1.75 oz)
  • ¼ cup mayonnaise (full-fat recommended)
  • 2 tablespoons sour cream
  • 3 tablespoons crumbled blue cheese (e.g. Maytag Blue)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and black pepper to taste
  • 12 slider buns (brioche-style recommended)
  • Optional: sliced dill pickles

Instructions

  1. Prepare the Buffalo Chicken: In a medium bowl, combine shredded rotisserie chicken with buffalo sauce, melted butter, garlic powder, salt, and pepper. Toss well to coat evenly. Warm the mixture in a skillet over medium heat for 3-4 minutes, stirring occasionally.
  2. Make the Creamy Blue Cheese Slaw: In a large bowl, whisk together mayonnaise, sour cream, apple cider vinegar, honey, salt, and black pepper until smooth. Add crumbled blue cheese and gently fold in shredded cabbage and carrots. Mix until coated but not mushy. Let sit 10-15 minutes if possible.
  3. Toast the Slider Buns: Slice buns in half horizontally. Toast cut sides in a skillet over medium heat for 1-2 minutes until golden and crisp. Alternatively, toast under a broiler for 1 minute, watching carefully.
  4. Assemble the Sliders: Spoon buffalo chicken onto bottom half of each bun. Top with a scoop of blue cheese slaw. Add sliced dill pickles if desired. Place top bun and gently press to secure.
  5. Serve immediately while warm with preferred sides.

Notes

Warm the chicken mixture to meld flavors and help sauce cling. Let slaw sit 10-15 minutes before serving for better flavor. Toast buns just before assembly to avoid sogginess. Adjust buffalo sauce heat to taste. Blue cheese can be swapped for feta or goat cheese if preferred. For gluten intolerance, use almond flour or gluten-free buns. Vegan mayo and cheese can be used for dairy-free versions.
