Cozy Apple Cinnamon Roll Casserole for Fall Brunch

A quick and easy breakfast casserole combining soft, gooey cinnamon rolls with tender caramelized apples and a rich custard, perfect for fall gatherings.

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
  • 3 medium apples, peeled and chopped (Honeycrisp or Granny Smith)
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar, packed
  • 4 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Reserved icing from cinnamon roll cans
  • 1/4 cup chopped pecans (optional)
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish with butter or non-stick spray.
  2. Peel and chop apples into 1/2-inch cubes. Heat a medium skillet over medium heat and melt 2 tablespoons of butter. Add apples, cinnamon, and brown sugar. Cook for 5-7 minutes, stirring occasionally, until softened but not mushy. Set aside to cool slightly.
  3. Open both cans of cinnamon rolls and set icing packets aside. Cut each cinnamon roll into quarters using kitchen scissors or a knife.
  4. Spread half of the cinnamon roll pieces in the prepared baking dish. Top with half of the cooked apples. Repeat with remaining cinnamon roll pieces and apples. Drizzle remaining 2 tablespoons melted butter over the top.
  5. In a large mixing bowl, whisk together eggs, heavy cream, whole milk, vanilla extract, and salt until well combined and slightly frothy, about 30 seconds. Pour custard evenly over the cinnamon roll and apple mixture. Gently press down with a spatula to help custard soak in.
  6. Let the casserole rest for 10 minutes before baking to allow custard to soak into the rolls.
  7. Bake for 28-32 minutes, until top is golden brown, edges are bubbly, and center is set but slightly jiggly. A knife inserted in the center should come out clean.
  8. Remove from oven and let cool for 5 minutes. Drizzle reserved icing over the top while still warm. Sprinkle with pecans if using.
  9. Serve warm, optionally drizzled with maple syrup.

Notes

For best texture, sauté apples first to remove excess moisture. Let casserole rest 10 minutes before baking to allow custard to soak in. Can prep components night before but assemble just before baking. For dairy-free, use coconut oil, full-fat coconut milk, and oat milk. For gluten-free, use gluten-free refrigerated cinnamon rolls.
