  • 1 cup (227g) unsalted butter, browned
  • 4 cups (about 4 medium) fresh ripe peaches, peeled and sliced (or thawed frozen peaches)
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan with butter or nonstick spray.
  2. Brown the butter in a medium skillet over medium heat, stirring frequently until it foams and turns golden brown with a nutty aroma (about 5 minutes). Remove from heat and let cool slightly.
  3. In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt. Pour the warm browned butter over the dry ingredients and mix until crumbly. Set aside about 1 1/2 cups for topping.
  4. Peel and slice the peaches. Toss them with granulated sugar, lemon juice, and vanilla extract.
  5. Press the remaining crumb mixture evenly into the bottom of the prepared pan to form a base.
  6. Spread the peach filling evenly over the crumb base.
  7. Sprinkle the reserved crumb topping evenly over the peaches.
  8. Bake for 35-40 minutes, until the topping is golden brown and the peach filling is bubbly around the edges.
  9. Cool completely in the pan on a wire rack for at least 30 minutes before slicing into squares.

Notes

Use a light-colored pan to brown butter to better monitor color and avoid burning. Cool bars completely before slicing to prevent sogginess. Tent with foil if crumb topping browns too quickly. For dairy-free, substitute butter with plant-based alternatives and brown sugar with coconut sugar. Frozen peaches can be used if thawed and drained well.
