  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • ½ cup (60 grams) chopped pecans or walnuts, toasted (optional)
  • Pinch of freshly ground nutmeg (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and cut 3 large sweet potatoes into roughly 1-inch cubes, keeping pieces uniform.
  3. If using nuts, spread ½ cup chopped pecans or walnuts on a baking sheet and toast in the oven for 5-7 minutes until fragrant and lightly browned. Set aside to cool.
  4. In a small saucepan or microwave-safe bowl, melt 4 tablespoons of unsalted butter. Stir in ½ cup brown sugar, ¼ cup pure maple syrup, 1 teaspoon ground cinnamon, 1 teaspoon vanilla extract, ½ teaspoon salt, and a pinch of nutmeg if desired. Warm gently and stir until sugar dissolves and mixture is smooth and glossy.
  5. In a large bowl, combine the cubed sweet potatoes with the glaze. Use a spatula to coat every piece evenly but gently.
  6. Spread the glazed sweet potatoes in an even layer in a 9×13-inch casserole dish. Sprinkle toasted nuts over the top if using.
  7. Bake uncovered for 35-40 minutes until sweet potatoes are fork-tender and glaze is bubbling with golden brown caramelization. Optionally stir halfway through baking.
  8. Let cool for 5-10 minutes before serving to allow glaze to thicken.

Notes

Use real maple syrup for best flavor and caramelization. Toast nuts carefully to avoid burning. If casserole edges brown too fast, tent with foil. For dairy-free, substitute butter with coconut oil or vegan butter. For nut-free, omit nuts. Adding a splash of heavy cream or coconut milk to the glaze adds creaminess. Leftovers keep well refrigerated for up to 4 days and reheat best in the oven at 325°F for 10-15 minutes.
