Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine peaches or peach preserves with brown sugar, lemon juice, cornstarch, cinnamon, and salt. Stir gently to coat evenly.
  3. Spread the peach mixture evenly in a 9×9-inch baking dish.
  4. In a large bowl, whisk together flour, baking powder, sugar, and salt. Add cold cubed butter and cut into the dry ingredients until mixture resembles coarse crumbs with pea-sized bits.
  5. Pour cold buttermilk into the flour-butter mixture and stir gently with a fork just until combined; dough will be shaggy and sticky.
  6. Drop biscuit dough in large clumps over the peach filling, leaving some gaps.
  7. Bake for 35–40 minutes until biscuit topping is golden brown and peach filling bubbles around edges.
