Ingredients

Scale
  • 46 pork chops (about 1 inch thick), bone-in or boneless
  • 3 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 ½ cups low-sodium beef broth
  • 1 packet (about 1 ounce) dry onion soup mix
  • 3 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • Salt and black pepper to taste
  • 1 bay leaf
  • Optional: fresh parsley, chopped, for garnish

Instructions

  1. Caramelize the onions: Melt butter in a large skillet over medium heat. Add sliced onions and a pinch of salt. Cook, stirring occasionally, for 8-10 minutes until soft, golden, and starting to brown. Add minced garlic in the last minute and stir until fragrant.
  2. Season and sear the pork chops: Pat pork chops dry with paper towels. Season both sides with salt, pepper, dried thyme, and crushed rosemary. Transfer caramelized onions to the crockpot. Return skillet to medium-high heat and add a splash of oil. Sear pork chops for 2-3 minutes per side until golden brown.
  3. Deglaze the pan: Pour about ½ cup of the beef broth into the hot skillet and scrape up browned bits. Pour this mixture over the onions in the crockpot.
  4. Assemble in the crockpot: Place seared pork chops on top of onions in a single layer. Sprinkle dry onion soup mix evenly over chops. Pour remaining 1 cup beef broth around the edges. Add bay leaf.
  5. Slow cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until pork shreds easily with a fork and internal temperature reaches 145°F. Remove bay leaf about 30 minutes before serving.
  6. Thicken the gravy: In a small bowl, whisk flour with ¼ cup of hot cooking liquid from the crockpot until smooth. Pour slurry back into crockpot and stir gently. Cook uncovered on high for 15-20 minutes, stirring occasionally, until gravy thickens.
  7. Rest and serve: Let pork chops rest in gravy for 5 minutes before serving. Spoon onion gravy generously over each chop and garnish with fresh parsley if desired.

Notes

For best texture, use evenly thick pork chops. Bone-in chops hold up better than boneless. If using thin chops (less than ¾ inch), reduce cooking time by about 1 hour. To make gluten-free, substitute flour with 2 tablespoons cornstarch mixed with ¼ cup cold water. For dairy-free, use olive oil instead of butter. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
