Ingredients

  • Honeynut squash (about 2 lbs or 4-5 small squashes)
  • Unsalted butter (4 tablespoons or 60g)
  • Yellow onion (1 medium, diced)
  • Garlic (3 cloves, minced)
  • Vegetable broth (4 cups or 960ml)
  • Heavy cream (1/2 cup or 120ml)
  • Maple syrup (1 tablespoon, optional)
  • Salt and black pepper (to taste)
  • Fresh sage leaves (6-8 leaves, for garnish)
  • Toasted pumpkin seeds (2 tablespoons, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the honeynut squashes and cut them in half lengthwise. Scoop out the seeds and stringy bits with a spoon.
  2. Place the squash halves cut-side up on a lined baking sheet. Drizzle with a little olive oil and sprinkle with salt and pepper. Roast for 30-35 minutes, until the flesh is tender and easily pierced with a fork. Let them cool for about 5 minutes.
  3. While the squash roasts, brown your butter. In a small skillet over medium heat, melt 4 tablespoons of unsalted butter. Swirl the pan occasionally. After about 3-4 minutes, when the butter starts to foam and turn golden with tiny brown specks and a nutty aroma, remove from heat immediately and pour into a small bowl. Set aside.
  4. In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook for 5-6 minutes, until soft and translucent. Add the minced garlic and cook for another minute, until fragrant.
  5. Scoop the roasted squash flesh out of the skins. Add the squash to the pot with the onions and garlic. Pour in the vegetable broth and bring everything to a gentle simmer. Let it cook for 10 minutes, stirring occasionally.

  8. For the garnish: In the same small skillet, melt a teaspoon of butter over medium heat. Add the fresh sage leaves and cook for 30-60 seconds per side, until crispy. Drain on a paper towel. Toast the pumpkin seeds in the same pan for 1-2 minutes.
