  • 1 cup milk (whole, oat, or almond)
  • 2 tablespoons creamy peanut butter
  • 1 medium ripe banana, mashed
  • 1 tablespoon maple syrup (or honey)
  • 1 tablespoon chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mason jar or container, mash the banana with a fork until mostly smooth, leaving a few small chunks.
  2. Add milk, peanut butter, maple syrup, and vanilla extract. Stir until peanut butter is mostly incorporated.
  3. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir well, scraping the bottom to combine.
  4. Check consistency; it should be slightly thin. If too thick, add 1-2 tablespoons more milk.
  5. Seal the container and refrigerate for at least 6 hours, preferably 8-12 hours (overnight).
  6. In the morning, stir well. Serve cold or microwave for 45-60 seconds for a warm breakfast.
  7. Top with sliced banana, extra peanut butter, chopped peanuts, or chocolate chips as desired.

Notes

For best texture, use rolled oats (not quick or steel-cut). The banana should be very ripe with brown spots. Stir before eating as peanut butter settles. Can be stored in the fridge for up to 4 days. To freeze, store in individual jars for up to 2 months; thaw overnight in the fridge.
