Instructions

  1. Brew the chai tea: Steep 2 chai tea bags in 1/2 cup of boiling water for 5 minutes. Remove the bags and set the tea aside.
  2. Combine the coconut milk and pumpkin: In a small saucepan over medium heat, add 1 cup of coconut milk and 2 tablespoons of pumpkin puree. Whisk together until the pumpkin is fully incorporated and no lumps remain, about 30 seconds.
  3. Add the spices and sweetener: Stir in 1/2 teaspoon of pumpkin pie spice, 1/4 teaspoon of ground cinnamon, and a pinch of sea salt. Add 1 to 2 tablespoons of maple syrup. Whisk everything together until the spices are fully dissolved and the mixture is steaming, about 2 to 3 minutes. Do not let it boil.
  4. Add the vanilla and chai: Remove the saucepan from the heat. Stir in 1/2 teaspoon of vanilla extract and the brewed chai tea. Whisk gently to combine. Taste and adjust sweetness or spices as desired.
  5. Pour and garnish: Pour the latte into a mug. Sprinkle extra cinnamon on top, or add a dollop of coconut whipped cream if desired. Serve immediately.
