  • ¼ cup (50g) granulated sugar (for coating)
  • 2 tablespoons ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, cream of tartar, baking soda, salt, pumpkin pie spice, and cinnamon until evenly distributed.
  3. In a large bowl, beat softened butter and 1 cup granulated sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes. Scrape down sides halfway through.
  4. Beat in pumpkin puree, egg, and vanilla extract until combined. The mixture may look slightly separated—this is normal.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed just until combined. Do not overmix. The dough will be soft and slightly sticky.
  6. In a small bowl, stir together ¼ cup granulated sugar and 2 tablespoons cinnamon for the coating.
  7. Using a cookie scoop or tablespoon, scoop about 1.5 tablespoons of dough (golf ball size). Roll into a smooth ball, then roll in the cinnamon-sugar mixture until completely coated. Place on prepared baking sheets, spacing 2 inches apart.
  8. Bake for 10-12 minutes. Cookies should look puffed and slightly cracked on top; edges will be set but centers still soft. For softer cookies, bake 10 minutes; for crispier edges, bake 12 minutes.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely. Centers will set as they cool.
