This cozy sausage and potato soup with kale is a hearty, one-pot wonder that comes together in about 40 minutes. With simple ingredients and a clever technique of smashing some potatoes for natural creaminess, it’s the perfect comfort food for cold weather.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 1.5 pounds Yukon Gold potatoes, diced into ½-inch cubes (about 4 medium potatoes)
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • 4 cups chopped kale (about 1 large bunch, stems removed)
  • ½ cup heavy cream (optional)
  • ¼ cup grated Parmesan cheese (for serving)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the sausage, breaking it apart with a wooden spoon. Cook for 6-8 minutes until deeply browned and cooked through. Use a slotted spoon to transfer the sausage to a plate, leaving the rendered fat in the pot.
  2. Reduce the heat to medium. Add the diced onion to the pot and cook for 4-5 minutes, stirring occasionally, until softened and translucent. Scrape up any browned bits from the bottom as you stir. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Stir in the diced potatoes, dried thyme, smoked paprika, salt, and black pepper. Cook for 2 minutes, stirring to coat. Use the back of your spoon to gently smash a few of the potato cubes against the side of the pot.
  4. Add the chicken broth and water to the pot. Increase the heat to high and bring to a boil. Once boiling, reduce the heat to medium-low and let it simmer uncovered for 15-18 minutes, or until the potatoes are tender when pierced with a fork.
  5. Stir in the chopped kale. Cook for 3-4 minutes, stirring occasionally, until the kale has wilted and turned a vibrant dark green.
  6. Return the browned sausage to the pot. If using heavy cream, stir it in now and let the soup simmer for 2 more minutes to heat through. Taste and adjust seasoning with additional salt and pepper if needed.
  7. Ladle the soup into bowls and top with a generous sprinkle of grated Parmesan cheese.

Notes

For a dairy-free version, omit the heavy cream and Parmesan, or swap the cream for full-fat coconut milk. For a vegetarian version, swap the sausage for 1.5 cups of cooked cannellini beans or chickpeas and use vegetable broth. To freeze, leave out the heavy cream and add it when reheating. The soup keeps in the refrigerator for up to 4 days and freezes for up to 3 months.
