  • 1 bottle (750 ml) champagne or sparkling wine (dry brut or extra brut)
  • ½ cup (120 ml) spiced rum or bourbon (optional)
  • ¼ cup (50 g) granulated sugar
  • 1 tablespoon (8 g) ground cinnamon
  • 2 tablespoons (30 ml) honey or maple syrup
  • 2 apples (Honeycrisp or Fuji), sliced
  • 68 cinnamon sticks
  • 46 fresh rosemary sprigs
  • ¼ cup (60 ml) caramel sauce
  • ½ cup (85 g) pomegranate seeds
  • 45 star anise (optional)

Instructions

  1. Prepare the cinnamon-sugar rim: In a small shallow dish, mix the granulated sugar and ground cinnamon until well combined. In another small dish, pour the honey or maple syrup. Dip the rim of each glass into the honey, then immediately into the cinnamon-sugar mixture. Gently twist to coat evenly. Set the glasses aside to dry for a minute.
  2. Mix the spiced cider base: In a large pitcher or measuring cup, combine the apple cider and spiced rum or bourbon. Stir gently to combine. Taste and adjust the strength if desired.
  3. Prepare the garnishes: Slice the apples into thin rounds or wedges. Toss them in a little lemon juice to prevent browning if making ahead. Arrange the cinnamon sticks, rosemary sprigs, pomegranate seeds, star anise, and caramel sauce in small bowls.
  4. Chill the champagne: Keep the bottle of champagne in an ice bucket or the refrigerator until ready to serve.
  5. Set up the bar: Arrange the rimmed glasses, the pitcher of spiced cider, the chilled champagne, and all the garnish bowls on a tray or counter. Place a small spoon or tongs in each garnish bowl.
  6. Build your mimosa: Fill each glass about halfway with the spiced cider mixture. Top off with champagne, pouring slowly to preserve the bubbles. The ratio is roughly 1:1, but adjust to preference.
  7. Add the garnishes: Let everyone customize their drink with a cinnamon stick, rosemary sprig, apple slices, caramel drizzle, and pomegranate seeds.

Notes

For a non-alcoholic version, omit the rum/bourbon and use non-alcoholic sparkling cider instead of champagne. Use frozen apple slices instead of ice cubes to keep the drink cold without diluting. The spiced cider base can be stored in the refrigerator for up to 3 days. Rimmed glasses can be prepped up to 2 hours ahead.
