  • 1 cup cooked shredded chicken
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing, plus extra for drizzling
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional garnishes: chopped green onions, fresh parsley, or blue cheese crumbles

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 30 minutes or microwaving in 10-second bursts until pliable.
  2. Shred the chicken using two forks; you should have about 1 cup.
  3. In a medium mixing bowl, combine softened cream cheese, sour cream, garlic powder, and onion powder. Beat with a hand mixer on medium speed until smooth and fluffy, about 1 minute.
  4. Add the buffalo wing sauce and mix until fully incorporated.
  5. Fold in the shredded chicken, 3/4 cup cheddar cheese, and all of the mozzarella cheese. Season with salt and pepper to taste.
  6. Transfer the mixture to a slow cooker or an 8×8 baking dish and spread into an even layer.
  7. Sprinkle the remaining 1/4 cup cheddar cheese over the top.
  8. If using a slow cooker, cook on low for 2 hours or on high for 1 hour, until bubbly and cheese is melted. If baking, preheat oven to 350°F and bake for 15-20 minutes.
  9. Just before serving, drizzle extra ranch dressing over the top in a zigzag pattern.
  10. Garnish with chopped green onions or parsley if desired. Serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best results, use block cream cheese (not spreadable) and rotisserie chicken. If dip looks oily after cooking, stir before adding ranch drizzle. Adjust buffalo sauce to taste: start with 1/3 cup for milder heat, up to 2/3 cup for extra kick. Dip can be assembled up to 24 hours ahead (without drizzle) and refrigerated.
