Instructions

  1. Prep the Vegetables and Fruit (10 minutes): Rinse the cabbage under cold water, remove tough outer leaves, cut into quarters, remove the core, and finely shred using a sharp knife or mandoline. Peel and grate the carrots. Peel and dice the apples into bite-size pieces, tossing them in a little lemon juice to prevent browning if prepping early.
  2. Mix the Dressing (5 minutes): In a small bowl, whisk together mayonnaise, sour cream, apple cider vinegar, honey or maple syrup, Dijon mustard, celery seed (if using), salt, and pepper. Taste and adjust seasoning as needed.
  3. Combine Ingredients (5 minutes): In a large mixing bowl, add shredded cabbage, grated carrots, diced apples, and raisins. Pour the dressing over and gently toss with a spatula or wooden spoon to coat without crushing the cabbage.
  4. Chill and Marinate (at least 30 minutes): Cover and refrigerate the coleslaw to let flavors marry and cabbage soften slightly while remaining crunchy. Ideally chill for 1 hour but 30 minutes is sufficient.
  5. Final Taste and Serve: Stir gently before serving, adjust salt, pepper, or vinegar if needed. Serve chilled or at room temperature.
