  • 1/4 cup (about 60g) small-curd, low-fat cottage cheese
  • 2 tablespoons fresh chives, chopped
  • 1 teaspoon everything bagel seasoning
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste
  • Optional: 1 tablespoon milk or cream for extra creaminess
  • Optional: Substitute chives with finely chopped green onions or parsley
  • Optional: Use Greek yogurt instead of cottage cheese for a tangier taste

Instructions

  1. Crack 4 large eggs into a mixing bowl. Add a pinch of salt and pepper. Whisk vigorously for about 1 minute until pale yellow and slightly frothy.
  2. Stir in 1/4 cup cottage cheese and 2 tablespoons chopped fresh chives, mixing gently to keep some curds intact.
  3. Heat a non-stick skillet over medium-low heat. Add 1 tablespoon unsalted butter and melt completely without browning.
  4. Pour the egg mixture into the skillet. Let sit undisturbed for about 20 seconds until edges start to set.
  5. Using a spatula, gently push eggs from edges toward the center, forming soft folds. Continue folding every 20 seconds over 3-4 minutes on low heat.
  6. When eggs are mostly set but still slightly runny, sprinkle 1 teaspoon everything bagel seasoning evenly over the top. Fold gently twice more to distribute.
  7. Remove pan from heat when eggs are creamy but no longer wet. Transfer to plates immediately and garnish with extra chives.

Cook eggs slowly over low heat to keep them creamy and moist. Avoid overbeating eggs to maintain a light texture. Adjust salt carefully due to salty everything bagel seasoning. Leftovers store well for up to 2 days in the refrigerator and reheat gently.
