  • 1.5 pounds boneless, skinless chicken breasts (or thighs)
  • 1 cup long-grain white rice, uncooked
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup low-sodium chicken broth
  • 4 oz cream cheese, softened and cubed
  • 1 packet dry onion soup mix
  • 1 cup frozen peas and carrots
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Cut chicken into bite-sized pieces (about 1-inch cubes) and season lightly with salt and pepper.
  2. In a mixing bowl, whisk together cream of chicken soup, cream of mushroom soup, and chicken broth until smooth. Add garlic powder, black pepper, and paprika; stir again.
  3. Spray a 6-quart slow cooker with non-stick spray. Add uncooked rice in an even layer. Place cubed chicken on top. Sprinkle dry onion soup mix over everything.
  4. Pour the soup mixture over the chicken and rice. Do not stir. Drop cubed cream cheese evenly over the top.
  5. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
  6. About 30 minutes before serving, stir in frozen peas and carrots. Let them heat through.
  7. Stir everything well. Let rest for 5 minutes before serving. The sauce will thicken as it sits.

Notes

For creamiest results, use full-fat cream cheese and cube it at room temperature. Don’t lift the lid during cooking. Long-grain white rice is best; avoid instant rice. If using brown rice, increase liquid and cooking time. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months.
