  • 2 pounds boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
  • 1 can (4 oz) diced mild green chiles
  • 3 cups low-sodium chicken broth
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 4 ounces cream cheese, softened
  • ½ cup sour cream, for garnish
  • Handful fresh cilantro, chopped for garnish
  • Salt and black pepper to taste

Instructions

  1. Dice the onion, mince the garlic, and finely chop the jalapeño if using. Rinse and drain the canned beans. Pat the chicken breasts dry with paper towels.
  2. Place the chicken breasts at the bottom of the crockpot. Add the chopped onion, garlic, jalapeño, beans, and green chiles on top.
  3. Pour in the chicken broth, then sprinkle the cumin, oregano, salt, and pepper evenly over the ingredients.
  4. Cover and cook on high for 4 hours or on low for 7 hours until the chicken is tender and easily shredded.
  5. Using two forks, shred the chicken directly in the crockpot and stir gently to mix.
  6. Cut the softened cream cheese into chunks and stir it into the chili until fully melted and creamy.
  7. Taste and adjust seasoning with salt and pepper. Add a splash of broth or water if the chili is too thick.
  8. Serve warm topped with a dollop of sour cream and a sprinkle of fresh cilantro.

Notes

Use softened cream cheese to avoid clumping. Rinse canned beans to reduce sodium and metallic taste. For a dairy-free version, substitute cream cheese and sour cream with coconut or cashew cream.
