  • 1 large yellow onion, thinly sliced
  • 3 tablespoons unsalted butter
  • 2 tablespoons heavy cream or whole milk (optional)
  • 1 cup shredded Gruyère cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 4 slices baguette or sourdough bread
  • 1 teaspoon olive oil (optional)

Instructions

  1. Heat 2 tablespoons of butter in a skillet over medium-low heat. Add the thinly sliced onions and a pinch of salt. Stir occasionally and cook slowly until onions are golden and soft, about 20 minutes. Add a splash of water if onions start sticking.
  2. Preheat the oven broiler. Arrange bread slices on a baking sheet, brush lightly with olive oil, and sprinkle generously with shredded Gruyère. Broil for 2-3 minutes until cheese bubbles and turns golden brown. Watch closely to avoid burning.
  3. In a bowl, whisk the eggs with cream or milk, salt, and freshly ground pepper until well combined and slightly frothy.
  4. Reduce heat to low. Add remaining tablespoon of butter to the pan with caramelized onions. Pour in the eggs and let sit undisturbed for about 20 seconds. Gently stir with a spatula, scraping the pan edges and folding eggs slowly toward the center. Continue stirring occasionally until eggs are softly set but still creamy, about 3 to 4 minutes. Remove from heat just before fully cooked.
  5. Fold half of the caramelized onions into the eggs gently. Serve immediately with the hot Gruyère toast on the side. Optionally, sprinkle extra cracked pepper on top.

Keep heat low and stir eggs gently to avoid dryness or rubbery texture. Caramelize onions slowly for best sweetness. Fold onions into eggs at the end to maintain texture. Watch broiler closely when melting cheese to prevent burning.
