  • ¼ cup (30g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs with melted unsalted butter. Stir until evenly coated and press firmly into the bottom and slightly up the sides of a 9-inch pie dish. Chill in the fridge for at least 15 minutes.
  2. Make the marshmallow cream base: In a large mixing bowl, combine mini marshmallows, powdered sugar, vanilla extract, and salt. Microwave in 20-second bursts, stirring between each, until marshmallows are soft and gooey (about 1 minute). Let cool slightly.
  3. Whip the cream: Using an electric mixer, whip heavy cream until soft peaks form (3-4 minutes).
  4. Combine marshmallow and cream: Gently fold whipped cream into the warm marshmallow mixture using a rubber spatula to preserve airy texture.
  5. Prepare the chocolate layer: Melt bittersweet chocolate chips over simmering water or in short microwave bursts, stirring frequently. Let cool slightly but remain pourable.
  6. Assemble the pie: Pour half the marshmallow cream mixture over the chilled crust and spread evenly. Drizzle half the melted chocolate and swirl gently. Add remaining marshmallow cream on top and smooth out. Drizzle remaining chocolate and sprinkle extra mini marshmallows or crushed graham crackers.
  7. Freeze: Cover tightly with plastic wrap and freeze for at least 4 hours or overnight.
  8. Serve: Remove from freezer 10 minutes before slicing. Use a hot knife for clean slices.
