A quick and easy homemade iced coffee featuring velvety pumpkin spice cold foam made without any fancy equipment. This café-quality drink comes together in under 5 minutes with simple ingredients for the perfect fall treat.

Ingredients

  • 3 tablespoons (45 ml) heavy cream
  • 2 tablespoons (30 ml) whole milk
  • 1 tablespoon (15 g) pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 tablespoon (15 ml) maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1 cup (240 ml) cold brew or strong brewed coffee
  • 1 cup ice cubes
  • Optional: Cinnamon stick or star anise for garnish

Instructions

  1. Fill a glass with ice cubes and pour 1 cup of cold brew or strong brewed coffee over the ice. Set aside.
  2. In a small bowl, combine pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract. Stir with a fork until smooth.
  3. Add the pumpkin mixture, heavy cream, and whole milk to a jar with a tight-fitting lid. Screw the lid on tightly.
  4. Shake the jar vigorously for 45-60 seconds until the mixture doubles in volume and becomes thick and fluffy, like soft peaks.
  5. Check the consistency: it should be thick enough to sit on a spoon but still pourable. If too runny, shake 10-15 seconds more; if too thick, add a teaspoon of milk and shake gently.
  6. Pour the cold foam over the back of a spoon onto the coffee to create a layered effect.
  7. Garnish with a pinch of pumpkin pie spice or cinnamon, and add a cinnamon stick or star anise if desired. Serve immediately.

Notes

Use cold ingredients straight from the fridge for best foam stability. Do not over-shake (max 90 seconds) or you’ll make butter. Always pour foam over the back of a spoon to keep it floating. The pumpkin spice mixture (without cream/milk) can be made up to 3 days ahead. For dairy-free, use full-fat coconut cream and oat milk. For sugar-free, substitute maple syrup with monk fruit syrup.
