This creamy, spicy buffalo chicken dip is loaded with blue cheese crumbles and baked to bubbly perfection. It’s the ultimate crowd-pleaser for game days, parties, or any gathering.

  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup blue cheese crumbles
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions and celery sticks for serving

Instructions

  1. Preheat your oven to 375°F.
  2. Shred your chicken using two forks.
  3. In a medium mixing bowl, combine the softened cream cheese, buffalo hot sauce, ranch dressing, and sour cream. Stir until smooth.
  4. Stir in the shredded cheddar, mozzarella, and about half of the blue cheese crumbles. Add garlic powder, onion powder, salt, and pepper. Mix until evenly distributed.
  5. Fold in the shredded chicken until every piece is coated.
  6. Spoon the mixture into a greased 9×13 inch baking dish and spread evenly.
  7. Sprinkle the remaining blue cheese crumbles on top.
  8. Bake for 20-25 minutes until hot and bubbly around the edges. Optionally broil for the last 2 minutes for a browner top.
  9. Let rest for 5 minutes before serving.
  10. Garnish with chopped green onions and serve warm with tortilla chips, celery sticks, or carrot sticks.

Notes

Let cream cheese soften for at least 30 minutes for best mixing. Shred your own cheese for smoother melting. The dip can be assembled the night before and refrigerated; add 5-10 minutes to baking time if starting from cold. For a slow cooker version, cook on low for 2-3 hours.
