Creamy Marry Me Chicken Recipe with Sun-Dried Tomatoes

A quick and easy creamy chicken dish with sun-dried tomatoes and a luscious cream sauce, perfect for cozy dinners and impressing guests without the fuss.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g), pounded slightly for even cooking
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup chicken broth (240 ml)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Pinch of red pepper flakes (optional)
  • A handful of fresh basil, chopped

Instructions

  1. Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to about 1/2-inch thickness. Season both sides generously with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering but not smoking.
  3. Add chicken breasts to the hot pan and cook about 3-4 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken to a plate and tent with foil to keep warm.
  4. Lower heat to medium and add butter to the pan. Once melted, stir in minced garlic and chopped sun-dried tomatoes. Cook for 1-2 minutes until fragrant but not browned.
  5. Pour in chicken broth, scraping up any browned bits from the pan’s bottom. Let simmer for about 2 minutes to reduce slightly.
  6. Stir in heavy cream and grated Parmesan cheese. Whisk continuously until the sauce thickens slightly and becomes silky, about 3 minutes. Add dried Italian herbs and red pepper flakes if using. Taste and adjust seasoning with salt and pepper.
  7. Nestle the seared chicken breasts back into the pan, spooning sauce over them. Simmer gently for 2-3 minutes so the chicken absorbs some sauce and stays juicy.
  8. Just before serving, sprinkle chopped fresh basil over the top.

Notes

If the sauce gets too thick, stir in a splash of chicken broth or cream to loosen it. Do not rush searing the chicken to develop a good crust. Use sun-dried tomatoes packed in oil for richer flavor. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
