  • 2 cups cold heavy whipping cream
  • 1 can (14 oz / 396 g) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • Pinch of salt (optional)

Instructions

  1. Prepare the Strawberries (10 minutes): Rinse and hull about 2 cups of fresh strawberries. Roughly chop half of them and puree the other half in a food processor or blender until smooth. Stir together the chopped and pureed strawberries with 1/2 cup granulated sugar and 1 tablespoon fresh lemon juice in a bowl. Let it sit for 10 minutes to macerate.
  2. Whip the Cream (5-7 minutes): Chill a large mixing bowl and beaters in the freezer for 10 minutes before whipping. Pour 2 cups of cold heavy whipping cream into the bowl and whip on medium-high speed until stiff peaks form.
  3. Mix Condensed Milk and Vanilla: In a separate bowl, combine one 14 oz (396 g) can of sweetened condensed milk with 1 teaspoon vanilla extract. Stir gently to blend.
  4. Combine Strawberry Mixture and Condensed Milk: Fold the macerated strawberry mixture into the condensed milk mixture, stirring carefully to keep the fruit pieces intact.
  5. Fold in Whipped Cream (3 minutes): Gently fold the whipped cream into the strawberry-condensed milk mixture using a spatula, folding lightly to keep the cream’s fluffiness.
  6. Freeze (6 hours or overnight): Pour the mixture into a freezer-safe container, smoothing the top with a spatula. Cover tightly with a lid or plastic wrap. Freeze for at least 6 hours or overnight.
  7. Serve: Remove from freezer 10 minutes before serving to soften slightly. Scoop and enjoy.

Notes

Whip cream to stiff peaks to ensure a light texture. Fold ingredients gently to keep air in the mixture. Use fresh strawberries for best flavor and avoid icy texture. Let ice cream soften 10 minutes before serving. Store tightly covered in freezer for up to two weeks.
