  • 1/2 cup red grapes, halved
  • 1/4 cup celery, finely diced
  • 2 tablespoons red onion, minced
  • 2 tablespoons fresh chives or parsley, chopped (optional)
  • 4 large flour tortillas or wraps (or gluten-free wraps, or large lettuce leaves for low-carb)
  • 4 large lettuce leaves (romaine or butter lettuce)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Make the Creamy Base: In a medium mixing bowl, add the ripe avocado, Greek yogurt, and fresh lemon juice. Mash with a fork until smooth and well combined. The mixture should be thick and creamy, like a spreadable dip. (Pro tip: If your avocado is a bit firm, microwave it for 10 seconds to soften it up.)
  2. Season the Base: Add the garlic powder, salt, and black pepper to the avocado mixture. Stir to combine. Taste and adjust seasoning.
  3. Prep the Mix-Ins: Ensure chicken is shredded or diced into bite-sized pieces. Halve the grapes, finely dice the celery, and mince the red onion.
  4. Combine Everything: Add the chicken, grapes, celery, red onion, and fresh herbs (if using) to the bowl with the creamy base. Use a rubber spatula to gently fold everything together until the chicken and fruit are evenly coated. Be careful not to overmix.
  5. Chill (Optional but Recommended): Cover the bowl and refrigerate the chicken salad for at least 15-20 minutes to allow flavors to meld.
  6. Assemble the Wraps: Lay a tortilla flat on a clean surface. Place a lettuce leaf in the center of the tortilla. Spoon about 1/2 cup of the chicken salad onto the lettuce leaf. Spread it evenly, leaving a 1-inch border around the edges.
  7. Roll It Up: Fold the sides of the tortilla inward, then roll it up tightly from the bottom, like wrapping a burrito. Place seam-side down on a plate. Repeat with remaining tortillas and filling.
  8. Slice and Serve: Use a sharp serrated knife to slice each wrap in half on a diagonal. Serve immediately, or wrap in parchment paper for lunchboxes.

Notes

For best texture, use full-fat Greek yogurt. The lemon juice prevents avocado from browning. Store filling separately from tortillas for up to 3 days. Assemble wraps fresh for best texture. To prevent sogginess, use a lettuce barrier between tortilla and filling. Can be made dairy-free by using dairy-free yogurt or extra avocado.
