Instructions

  1. Take 4 large eggs out of the fridge to reach room temperature (about 10 minutes). Soften 2 tablespoons of cream cheese by leaving it at room temperature or microwaving for 10 seconds if needed.
  2. In a mixing bowl, crack the eggs and add the softened cream cheese. Whisk vigorously until the mixture is smooth and the cream cheese is mostly blended in.
  3. Stir in 2 tablespoons of whole milk or cream, a pinch of salt, and freshly ground black pepper. Whisk again to combine fully.
  4. Place a non-stick skillet on low heat. Add 1 tablespoon of unsalted butter and let it melt slowly.
  5. Pour the egg mixture into the skillet. Let it sit undisturbed for about 20 seconds until the edges begin to set.
  6. Using a rubber spatula, gently push the eggs from the edges toward the center, forming soft curds.
  7. Continue to gently fold the eggs every 15-20 seconds, keeping the heat low to avoid overcooking.
  8. When the eggs are mostly set but still slightly wet and shiny (after about 3-4 minutes total cooking), remove the pan from heat. The residual warmth will finish cooking them.
  9. Transfer the scrambled eggs to a warm plate and garnish with chopped fresh herbs if desired. Serve immediately.
