  • 2 pounds boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved or quartered
  • 1 packet (1 ounce) ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup chicken broth, low sodium
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Rinse the chicken breasts and pat dry. Halve or quarter the baby potatoes so they cook evenly.
  2. In a mixing bowl, combine softened cream cheese, ranch seasoning packet, garlic powder, onion powder, salt, and pepper. Stir in chicken broth until smooth and creamy.
  3. Place chicken breasts at the bottom of the slow cooker. Scatter potatoes evenly on top.
  4. Pour the creamy ranch mixture over the chicken and potatoes, coating them well.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until chicken reaches 165°F and potatoes are tender.
  6. Remove chicken breasts and shred with two forks. Return shredded chicken to slow cooker and stir gently to combine.
  7. Cook together for another 15 minutes on low to meld flavors.
  8. Serve hot, garnished with chopped fresh parsley.

Notes

If sauce is too thin after cooking, remove lid and cook on high for 15-20 minutes to thicken. If too thick, add a splash more broth before serving. Keep slow cooker lid closed during cooking to retain moisture. Use uniform potato sizes for even cooking. Softening cream cheese before mixing ensures a smooth sauce.
