A light, airy, and decadently rich whipped feta dip balanced with the sweetness of honey and the smoky depth of roasted tomatoes. Perfect for quick snacks or entertaining.

Ingredients

Scale
  • 8 ounces block feta cheese (preferably firm, small-curd variety)
  • 1 cup cherry or grape tomatoes, halved
  • 2 tablespoons honey (raw or wildflower preferred)
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon fresh thyme or basil, chopped (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt (optional, as feta is salty)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the halved cherry tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle lightly with salt and freshly ground black pepper. Toss to coat evenly.
  3. Roast the tomatoes for 15-20 minutes until softened and slightly caramelized around the edges.
  4. While the tomatoes roast, crumble the feta into a food processor. Add the remaining 1 tablespoon olive oil, minced garlic, and lemon juice. Pulse until smooth and creamy, scraping down the sides as needed (about 2-3 minutes).
  5. Once the tomatoes have cooled slightly, add them to the whipped feta along with 2 tablespoons honey. Pulse gently a couple of times to combine, leaving some tomato chunks for texture.
  6. Taste and adjust seasoning with black pepper or a pinch of salt if necessary. Fold in fresh thyme or basil if using.
  7. Transfer the dip to a serving bowl. Serve immediately at room temperature or chill for an hour to meld flavors.

Notes

Use block feta cheese for a creamier texture rather than pre-crumbled feta. Roasting tomatoes is essential for sweetness and depth. Adjust salt carefully as feta is naturally salty. The dip can be served immediately or chilled for deeper flavor. If too thick, loosen with a splash of water or olive oil. For vegan adaptation, use silken tofu with nutritional yeast and agave syrup instead of honey.
