  • 6 ounces crumbled feta cheese (preferably block feta)
  • 6 tablespoons unsalted butter
  • ½ cup whole milk, warmed (substitute almond milk for dairy-free)
  • 2 tablespoons finely chopped fresh chives
  • 1 small clove garlic, minced (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Peel and cut 2 pounds of russet potatoes into 1.5-inch chunks. Rinse under cold water to remove excess starch.
  2. Place potatoes in a large pot, cover with cold water by at least an inch, add 1 teaspoon salt, bring to a boil, then simmer gently for 15–20 minutes until fork-tender.
  3. Drain potatoes in a colander and return to the pot. Place over low heat for 1–2 minutes to evaporate excess moisture.
  4. While potatoes cook, melt 6 tablespoons unsalted butter in a skillet over medium heat. Stir frequently and cook until golden brown and nutty smelling, about 4–5 minutes. Remove from heat.
  5. Transfer potatoes to a mixing bowl. Using an electric mixer, beat on medium speed while gradually adding ½ cup warm whole milk. Beat until smooth and creamy, about 2–3 minutes.
  6. Fold in 6 ounces crumbled feta and minced garlic if using. Mix until combined.
  7. Pour brown butter over the potatoes and gently fold in 2 tablespoons chopped fresh chives. Season with salt and freshly ground black pepper to taste. Mix gently to combine.
  8. Serve warm, garnished with extra chives or a drizzle of brown butter if desired.

Notes

Use russet or Yukon Gold potatoes for best texture. Brown the butter carefully to avoid burning. Whip potatoes while warm for fluffiest texture. Adjust salt carefully as feta is salty. For dairy-free, substitute butter and milk with plant-based alternatives and use plant-based cheese or nutritional yeast instead of feta.
