A quick and easy recipe for perfectly crispy chicken wings using an air fryer, delivering a satisfying crunch without deep frying.

Ingredients

Scale
  • 2 pounds (900 g) chicken wings, tips removed if preferred
  • 1 tablespoon (15 g) baking powder (aluminum-free, e.g., Rumford)
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (2.5 g) black pepper, freshly ground
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • 1 teaspoon (5 g) smoked paprika
  • 1/4 teaspoon (1 g) cayenne pepper (optional)
  • 1 tablespoon (15 ml) olive oil or avocado oil

Instructions

  1. Pat the wings dry thoroughly using kitchen paper towels (about 5 minutes).
  2. In a large mixing bowl, combine baking powder, salt, black pepper, garlic powder, onion powder, smoked paprika, and optional cayenne pepper; stir until well blended (2 minutes).
  3. Add the dried wings to the bowl, drizzle with oil, and toss well to coat all wings evenly (3 minutes).
  4. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  5. Arrange the wings in a single layer inside the air fryer basket without overlapping; cook in batches if necessary (1 minute).
  6. Air fry the wings at 400°F (200°C) for 25 minutes total, shaking or flipping halfway through (12-13 minutes) for even browning.
  7. Check for doneness; internal temperature should reach 165°F (74°C) or juices run clear (1 minute).
  8. Optionally, toss cooked wings in your favorite sauce (2 minutes).
  9. Serve immediately for the crispiest results.

Notes

Pat wings dry thoroughly to ensure crispiness. Use baking powder, not baking soda, to avoid metallic taste. Preheat the air fryer and flip wings halfway through cooking for even browning. Avoid overcrowding the basket to prevent soggy skin. A light coating of oil helps seasoning stick and promotes browning. Reheat leftovers in the air fryer at 350°F for 5-7 minutes to maintain crispiness.
