  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 large jalapeño peppers, halved and seeded
  • 12 slices thin-cut bacon
  • Toothpicks, for securing

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Par-cook the bacon for about 5 minutes in the oven or in a skillet over medium heat until partially cooked but still flexible.
  3. While the bacon cools, cut each jalapeño in half lengthwise and remove seeds and membranes with a small spoon.
  4. In a medium bowl, combine softened cream cheese, shredded cheddar, sour cream, garlic powder, smoked paprika, salt, and pepper. Mix until smooth.
  5. Fill each jalapeño half with about a heaping teaspoon of the cream cheese mixture.
  6. Wrap each filled pepper with a half slice of par-cooked bacon, starting at one end and overlapping slightly. Secure with a toothpick.
  7. Place the wrapped bites on the wire rack, spacing them about an inch apart.
  8. Bake for 18-22 minutes, until bacon is golden brown and crispy and filling is bubbly.
  9. Let rest on the rack for 5 minutes before serving.

Notes

Do not skip par-cooking the bacon—it prevents sogginess. Use thin-cut bacon for best crispiness. Soak toothpicks in water for 10 minutes if grilling to prevent burning. Let bites rest 5 minutes before serving to allow filling to set.
