  • 3 tbsp (60 ml) honey
  • 2 tbsp (30 ml) soy sauce
  • 3 cloves minced garlic
  • 1 tbsp (15 ml) rice vinegar
  • ¼ tsp red pepper flakes (optional)
  • 2 green onions, thinly sliced for garnish

Instructions

  1. Pat the salmon fillet dry with paper towels, then cut into 1-inch cubes. Season lightly with salt and pepper.
  2. In a medium bowl, combine ½ cup all-purpose flour, 2 tablespoons cornstarch, and a pinch of salt. Toss the salmon cubes gently in the mixture until evenly coated.
  3. Pour about ¼ cup vegetable or canola oil into a large skillet over medium-high heat. Heat until shimmering but not smoking, about 3-4 minutes.
  4. Carefully place the coated salmon cubes in the hot oil, leaving space between pieces. Fry for about 2-3 minutes per side, turning gently with tongs, until golden and crisp. Transfer onto a paper towel-lined plate to drain excess oil.
  5. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and red pepper flakes if using.
  6. Wipe out the skillet and reduce heat to medium-low. Pour the glaze mixture into the pan and cook, stirring constantly, for about 1-2 minutes until it thickens slightly and becomes glossy.
  7. Return the fried salmon bites to the skillet and gently toss with the glaze until each piece is evenly coated.
  8. Transfer to a serving dish and sprinkle with sliced green onions. Serve immediately.
