A quick and easy one-pan recipe featuring crispy skin chicken thighs glazed with a sweet and savory honey garlic sauce, roasted alongside tender vegetables for a comforting and flavorful meal.

  • 6 bone-in, skin-on chicken thighs
  • 1/4 cup (85g) honey
  • 3 tablespoons (45ml) low-sodium soy sauce
  • 1 tablespoon (15ml) apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon (15ml) extra virgin olive oil
  • 1 cup (130g) baby carrots
  • 1 cup (90g) halved Brussels sprouts
  • 1.5 cups (210g) quartered red potatoes
  • Fresh thyme or rosemary sprigs
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together honey, soy sauce, apple cider vinegar, and minced garlic to prepare the glaze. Set aside.
  3. Toss baby carrots, halved Brussels sprouts, and quartered red potatoes with olive oil, salt, pepper, and fresh thyme or rosemary.
  4. Pat chicken thighs dry thoroughly with paper towels to ensure crispy skin.
  5. Season chicken thighs generously with salt and pepper on both sides.
  6. Heat olive oil in an oven-safe skillet over medium-high heat. Place chicken skin-side down and sear without moving for 6-7 minutes until skin is golden and crisp. Flip and cook for 2 minutes on the other side.
  7. Arrange the prepared vegetables around the chicken in the skillet.
  8. Drizzle the honey garlic glaze evenly over the chicken and vegetables, coating the chicken skin lightly with the sauce.
  9. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
  10. Remove from oven and let the chicken rest for 5 minutes to lock in juices.
  11. Spoon some of the pan sauce over the chicken and vegetables before serving.

Notes

Dry chicken skin thoroughly before searing to achieve crispiness. Do not move chicken while searing to allow skin to crisp properly. Avoid overcrowding the pan to ensure vegetables roast rather than steam. Baste chicken and vegetables halfway through roasting if glaze thickens too much. For gluten-free, substitute soy sauce with tamari. For vegan adaptation, use maple syrup instead of honey and substitute chicken with tofu or cauliflower steaks. Rest chicken after roasting to lock in juices. Reheat leftovers in a skillet to maintain crispy skin.
