  • 1/2 cup blue cheese crumbles
  • 1/3 cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 12 tbsp milk (dairy or dairy-free)
  • Freshly ground black pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and allow to fully heat for about 15 minutes.
  2. In a mixing bowl, combine chicken pieces with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
  3. Spread the seasoned chicken on one half of a large rimmed sheet pan. Bake for 10-12 minutes until chicken is cooked through and starts to brown, stirring halfway through.
  4. Remove sheet pan from oven and toss chicken with buffalo wing sauce, coating each piece lightly.
  5. Layer tortilla chips evenly on the other half of the sheet pan. Sprinkle shredded cheddar and Monterey Jack cheeses over the chips, then scatter buffalo chicken on top.
  6. Top with jalapeños and red onion.
  7. Return sheet pan to oven and bake for an additional 7-10 minutes until cheese melts and chips turn golden.
  8. While nachos bake, whisk together blue cheese crumbles, sour cream, mayonnaise, lemon juice, and milk until smooth but thick enough to drizzle. Add black pepper to taste.
