  • Pepperoni slices or preferred pizza toppings (optional)

  • Grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • For the marinara sauce:
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 (28-ounce) can crushed tomatoes (San Marzano if possible)
  • Pinch of sugar
  • Salt and black pepper, to taste
  • 1 teaspoon dried basil or 5 fresh basil leaves, chopped
  • Red pepper flakes (optional)

Instructions

  1. Prepare the Marinara Sauce: Heat 2 tablespoons olive oil in a saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add crushed tomatoes, sugar, salt, pepper, basil, and red pepper flakes if using. Simmer uncovered, stirring occasionally, for about 20 minutes until slightly thickened. Set aside to cool.
  2. Prepare the Bread and Filling: Trim crusts off sourdough slices if desired. Flatten each slice gently with a rolling pin or hands. Spread a thin layer of cooled marinara sauce on each slice, then sprinkle shredded mozzarella and add pepperoni or other fillings. Season with dried Italian herbs, salt, and pepper.
  3. Roll and Secure: Roll each slice tightly into a cigar shape. Place seam-side down on a parchment-lined baking sheet. Brush tops with olive oil and sprinkle grated Parmesan cheese.
  4. Bake the Pizza Rolls: Preheat oven to 400°F (200°C). Bake rolls on middle rack for 12-15 minutes until golden and crispy. Flip rolls halfway through baking for even crispness. Adjust temperature/time if browning too fast.
  5. Serve Hot: Warm remaining marinara sauce if needed and serve as a dipping sauce alongside the pizza rolls. Enjoy immediately.

Notes

Use day-old sourdough bread for best texture. Brush olive oil generously for crispiness. Flip rolls halfway through baking to ensure even browning. Marinara sauce can be made ahead and tastes better after resting. For gluten-free, swap bread and toppings accordingly. Rolls can be frozen before baking and baked from frozen with extra time.
