Ingredients

Scale
  • 2 pounds chicken wings, split into flats and drumettes, skin on
  • 1/4 cup honey (85 g)
  • 1/3 cup BBQ sauce (80 ml), smoky and robust
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper, adjustable
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • For the blue cheese dip:
  • 1/2 cup blue cheese, crumbled (about 75 g)
  • 1/2 cup sour cream (120 ml)
  • 1/4 cup mayonnaise (60 ml)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken wings dry with paper towels to ensure crispiness.
  3. Toss wings in olive oil, salt, and black pepper in a large bowl until evenly coated.
  4. Arrange wings skin side up on a wire rack set over a rimmed baking sheet, spacing them apart to allow air circulation.
  5. Bake wings for 35-40 minutes, flipping them over around 30 minutes to crisp both sides. The skin should be golden and juices clear when pierced.
  6. While wings bake, whisk together honey, BBQ sauce, smoked paprika, cayenne pepper, and garlic powder in a small bowl. Adjust heat as desired.
  7. Once wings are done, transfer them to a clean bowl and toss gently but thoroughly with the honey BBQ sauce until coated.
  8. Prepare the blue cheese dip by combining crumbled blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, salt, and pepper in a bowl. Mix gently to keep some texture and refrigerate until serving.

Notes

Pat wings dry thoroughly to avoid sogginess. Use a wire rack to allow air circulation and fat drip. Flip wings halfway through baking for even crispiness. For extra crisp, broil 1-2 minutes watching closely. The blue cheese dip can be made ahead to meld flavors. Adjust cayenne pepper to control heat level. Use gluten-free BBQ sauce for gluten-free option. Dairy-free dip alternatives include silken tofu with nutritional yeast and lemon juice.
