  • 1 ½ cups fresh corn kernels (about 2 ears) or frozen, thawed
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 small red onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 4 large flour tortillas (10-inch size)
  • 2 tablespoons olive oil or vegetable oil
  • ½ cup sour cream or Greek yogurt
  • 1 tablespoon chipotle in adobo sauce, finely chopped
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest (optional)
  • Salt to taste

Instructions

  1. Grate the zucchini and squeeze out as much moisture as possible using a clean kitchen towel or paper towels (about 5 minutes).
  2. In a large mixing bowl, combine the squeezed zucchini, corn kernels, diced red onion, minced garlic, shredded cheddar and Monterey Jack cheeses, ground cumin, salt, and pepper. Stir until evenly mixed.
  3. In a small bowl, whisk together sour cream or Greek yogurt, chopped chipotle in adobo, lime juice, lime zest, and a pinch of salt. Adjust heat and acidity to taste. Refrigerate until ready to serve.
  4. Heat 1 tablespoon of olive oil in a large non-stick skillet or cast iron pan over medium heat until shimmering but not smoking.
  5. Place one tortilla flat on a cutting board. Spread about ⅓ to ½ cup of the filling over half the tortilla, leaving a small border around the edge. Fold the other half over to cover the filling.
  6. Transfer the folded quesadilla to the hot skillet. Cook for 3-4 minutes per side, pressing gently with a spatula, until golden brown and crispy and the cheese is melted inside. Flip carefully to avoid spillover.
  7. Add more oil if needed and cook remaining quesadillas in batches. Keep cooked quesadillas warm in a low oven (around 200°F) while finishing the rest.
  8. Cut each quesadilla into wedges and serve immediately with a generous dollop of chipotle lime crema on the side or drizzled on top.
