  • 8 oz (225g) cream cheese, softened
  • ¼ cup (60g) unsalted butter, softened
  • 1 ½ cups (180g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 12 tablespoons whole milk or heavy cream
  • 1 ½ cups fresh strawberries, hulled and sliced
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 12-inch pizza pan with butter or non-stick spray to prevent sticking.
  2. In a large bowl, whisk together the melted butter and granulated sugar until combined. Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. Sift together the cocoa powder, all-purpose flour, salt, and baking powder in a separate bowl. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until thick, smooth, and glossy.
  4. Spread the batter evenly onto the prepared pizza pan using the back of a spatula to smooth the top.
  5. Bake for 25-30 minutes until edges are set and a toothpick inserted near the center comes out with a few moist crumbs but no raw batter.
  6. Cool the brownie completely on a wire rack for about 45 minutes to 1 hour.
  7. Prepare the cream cheese frosting by beating the softened cream cheese and butter together until smooth and fluffy. Gradually add powdered sugar and beat until combined. Stir in vanilla and milk, adjusting for spreadable consistency.
  8. Frost the cooled brownie pizza evenly with the cream cheese frosting using a spatula.
  9. Arrange sliced strawberries on top of the frosting in a circular pattern or scattered freely. Garnish with fresh mint leaves if desired.
  10. Serve immediately or chill briefly before slicing into wedges.

Notes

If frosting is too thick, add milk a teaspoon at a time; if too thin, add more powdered sugar. Use a sharp serrated knife for clean slices. Cool brownies completely before frosting to prevent melting. Fresh strawberries should be dry before arranging to avoid watery frosting. For gluten-free, substitute flour with a 1:1 gluten-free baking blend. For vegan/dairy-free, use dairy-free cream cheese and butter substitutes and flax eggs.
