Ingredients

Scale
  • 1 cup (225g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour (can substitute with almond flour for gluten-free)
  • ¾ cup (75g) unsweetened cocoa powder (Dutch-processed if desired)
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (60g) crushed graham crackers
  • 3 cups (225g) mini marshmallows
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing it lightly and lining with parchment paper, leaving some overhang for easy brownie removal.
  2. In a large bowl, whisk together the melted butter and granulated sugar until combined but not grainy—about 2 minutes. Then add the eggs one at a time, whisking well after each addition, followed by the vanilla extract.
  3. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet bowl, folding gently with a spatula just until combined. Stop as soon as the flour disappears to avoid overmixing.
  5. Stir in the chocolate chips and crushed graham crackers.
  6. Pour the batter into your prepared pan and spread it out evenly with a spatula. Bake for 25-30 minutes until the top is set with a slightly fudgy center (test with a toothpick; it should come out with moist crumbs).
  7. While the brownies bake, melt the butter in a small saucepan over low heat, then add the mini marshmallows. Stir continuously until melted and smooth, about 3-5 minutes, being careful not to burn them.
  8. Remove the brownies from the oven and immediately spread the warm marshmallow topping evenly over the surface. Return the pan to the oven for 3-5 minutes until the topping is puffed and golden.
  9. Cool the brownies completely before slicing to allow the marshmallow topping to set and prevent sticking.

Notes

Do not overmix the batter to keep brownies tender and fudgy. Use quality chocolate chips for best flavor. Stir marshmallows constantly on low heat to avoid burning. Let brownies cool completely before slicing to prevent marshmallow topping from sticking. Use a serrated knife for clean slices. For dairy-free or gluten-free versions, swap ingredients accordingly.
