  • 4 ripe but firm peaches, halved and pitted
  • 1 cup (about 8 oz or 240g) mascarpone cheese, room temperature
  • 3 tablespoons honey, preferably floral or wildflower
  • 1 tablespoon olive oil, for brushing
  • 1 teaspoon fresh lemon juice (optional)
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the grill or grill pan to medium-high heat (about 375°F or 190°C).
  2. Rinse and gently dry the peaches. Slice each peach in half and remove the pit.
  3. Brush the cut sides of the peaches lightly with olive oil to prevent sticking and encourage caramelization.
  4. In a mixing bowl, stir mascarpone with lemon juice if using. Set aside at room temperature for easy spreading.
  5. Place the peaches cut-side down on the grill. Grill for 3–4 minutes without moving to develop char marks.
  6. Flip the peaches and grill the skin side for another 2 minutes until tender but not mushy.
  7. Transfer grilled peaches to a plate and let them cool for a few minutes.
  8. Spoon or spread a generous dollop of mascarpone onto each peach half.
  9. Drizzle honey over the top of each peach half.
  10. Garnish with fresh mint leaves and serve immediately while warm.

Use ripe but firm peaches to hold their shape on the grill. Brush peaches with olive oil to prevent sticking and promote caramelization. Watch grill times closely to avoid mushy or burnt peaches. Room temperature mascarpone spreads easier and feels creamier. Variations include adding spices to mascarpone or topping with nuts. For dairy-free, substitute mascarpone with coconut cream and honey with maple syrup or agave.
