Delicious Red White and Blue Jello Parfait Cups Recipe with Cream Cheese Mousse

  • 1 package (3 oz / 85 g) strawberry or cherry flavored gelatin
  • 1 package (3 oz / 85 g) blueberry or raspberry flavored gelatin (blueberry preferred)
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 ml) heavy whipping cream, cold
  • ½ cup (60 g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • Fresh strawberries, sliced (optional)
  • Fresh blueberries or thawed frozen blueberries (optional)
  • Cold water for preparing gelatin (per package instructions)
  • Mint leaves for garnish (optional)

Instructions

  1. Dissolve the red gelatin powder in 1 cup (240 ml) boiling water according to package directions. Stir until fully dissolved. Add 1 cup (240 ml) cold water, mix well, and pour about ¼ cup (60 ml) into each parfait cup. Chill in the refrigerator for 30-40 minutes or until firm but slightly tacky to touch.
  2. While the red jello chills, beat the softened cream cheese in a large bowl until smooth and creamy (about 2-3 minutes). In a separate bowl, whip the cold heavy cream with powdered sugar and vanilla until stiff peaks form. Gently fold the whipped cream into the cream cheese until fully combined and light.
  3. Once the red jello layer is set but tacky, spoon or pipe about ¼ cup (60 ml) of the cream cheese mousse over it. Smooth the surface carefully with a spoon. Return cups to the fridge and chill for another 30 minutes to allow the mousse to firm slightly.
  4. Repeat the gelatin dissolving process with the blue gelatin powder. Cool slightly at room temperature (but don’t let it set), then pour ¼ cup (60 ml) gently over the mousse layer. Chill again for 30-40 minutes until set.
  5. Add a final layer of cream cheese mousse on top (about ¼ cup / 60 ml) and smooth. Garnish with fresh strawberries, blueberries, or a sprig of mint if desired. Chill for at least 1 hour before serving.

Notes

Pour gelatin layers slowly over the back of a spoon to avoid disturbing the mousse. Chill each layer fully to keep neat stripes and prevent colors from mixing. Soften cream cheese well before whipping to avoid lumps. Use cold cream and whip to stiff peaks for airy mousse. Freezing between layers can speed setting but do not freeze solid. Clean bowls immediately after use to remove cream cheese residue.
