This quick and easy iced pumpkin spice latte uses just three simple ingredients—pumpkin puree, cold brew, and milk—for a creamy, flavorful fall drink that’s ready in under five minutes.

  • 1 cup (240 ml) cold brew or strong coffee, cooled
  • ½ cup (120 ml) milk of your choice (whole, oat, almond, or coconut)
  • Ice cubes (as needed)
  • Optional: pumpkin pie spice, maple syrup, whipped cream for garnish

Instructions

  1. In a mason jar or blender, combine ¼ cup pumpkin puree and ½ cup milk. Shake vigorously for 30 seconds or blend until smooth and uniform in color.
  2. Taste and add 1-2 teaspoons of maple syrup or honey if desired. Shake or blend again to incorporate.
  3. Fill a tall glass about three-quarters full with ice cubes.
  4. Pour the pumpkin milk mixture over the ice.
  5. Gently pour 1 cup of cold brew or cooled strong coffee over the pumpkin milk. For distinct layers, pour over the back of a spoon.
  6. Stir gently from the bottom up until the drink is a uniform light caramel color.
  7. Garnish with a sprinkle of pumpkin pie spice or cinnamon, and whipped cream if desired. Serve immediately.

Notes

For best results, use room temperature milk and pumpkin puree for easier mixing. Do not exceed ¼ cup of pumpkin puree to avoid a thick, pasty texture. The pumpkin milk mixture can be stored in the refrigerator for up to 3 days. For a hot version, warm the pumpkin milk mixture on the stovetop and use hot coffee.
