  • 2 packs instant ramen noodles (discard or save one flavor packet for the sauce)
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 2 large eggs
  • 3 tablespoons soy sauce (low-sodium if desired)
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil (or neutral oil)
  • Optional: 1 tablespoon sesame oil
  • Optional: 1 teaspoon sriracha or chili flakes
  • Optional: sliced green onions for garnish
  • Optional: sesame seeds for garnish
  • Optional: cooked chicken or tofu for extra protein

Instructions

  1. Boil the noodles: Bring 4 cups of water to a boil in a small pot. Add both blocks of ramen noodles (discard or save one flavor packet). Cook for 2 minutes, breaking up the noodles with a fork. Drain immediately and set aside.
  2. Prep your pan: Place a large skillet over medium-high heat. Add 1 tablespoon vegetable oil. Let it heat for about 30 seconds until shimmering. If using sesame oil, add it now.
  3. Cook the aromatics: Add minced garlic to the hot oil. Stir constantly for about 30 seconds until fragrant. Do not let it brown.
  4. Add the vegetables: Toss in frozen mixed vegetables straight from the bag. Spread in an even layer. Cook undisturbed for 1 minute, then stir and cook for another 2 minutes until heated through and slightly charred.
  5. Push veggies to the side: Make a well in the center of the pan. Crack both eggs into the well. Let them set for 30 seconds, then scramble with a spatula. Cook until just set but still soft (about 1 minute). Mix into the vegetables.
  6. Add the noodles: Toss in the drained ramen noodles. Spread evenly in the pan. Let sit for 30 seconds to get crispy on the bottom, then stir. Repeat a few times for maximum texture.
  7. Season and sauce: Drizzle soy sauce over everything. If you saved a ramen flavor packet, sprinkle half of it over the noodles. Toss until evenly coated.
  8. Finish and serve: Taste and adjust seasoning. Garnish with green onions and sesame seeds if desired. Serve immediately.

Notes

For best texture, undercook the noodles slightly before stir-frying. Use high heat to achieve wok hei flavor. Let the noodles sit in the pan for 30 seconds before stirring to create crispy bits. Season in layers to avoid over-salting. Prep all ingredients before starting to prevent burning.
